The profiteers care. Down time due to panicked animals at the slaughterhouse blocking the processing line, and damage to product due to panicked animals crashing about, allowed Grandin to step into a niche occupation, using her skills (or limitations, if you're a glass half empty).

Other people may care for other reasons.

Or like yourself, some people may not care at all beyond their own bellies.
