If your experiences were continuous you'd be able to account for every single second of your being in the last 7 days.

You can't. Because your brain does regular garbage collection. For good reasons.
All experiences cannot be observed, yet experience as observed is continually changing to another experience.

Do we ever change? Do we ever move beyond (rise above) our experience? Do we evolve our sense of self?

If so, what is the consistent identity?
The consistency of identity is found in replicable (circulating) actions and dually with the self acting as the point of change. The "I" always points to another phenomenon, with this pointing being the act of change. "I" is change in one respect and circularity (as the repetition of one phenomenon across multiple times/spaces) in another.

So, identity can be fake... because actions can certainly be fake. Yes?
A faked action is still an action, at most identity cannot be original thus fragmented. So to answer your question from another angle, yes identity can be fragmented and unoriginal.
So is identity an illusion?

I certainly don't think it is. Although, I know you're not asking me.

If it strayed from the original source, yes.

Identity is the story we tell ourselves about who we are in relation to our circumstances.

A fair assessment, indeed.

As such the story can be fictional, but the story teller will always know this.

Identity is the story we tell ourselves about who we are in relation to our circumstances.
Yet the story is identified as itself. We are what we relate too.
