Because one's knowledge of a cat is testable AND falsifiable.
If I claim that I know a cat has 43 chromosome pairs you could (independently) test/falsify this claim.

One's knowledge of God is neither testable nor falsifiable.
If I claim that I know God has 1843 chromosome pairs you can neither test nor falsify this claim.

Gross mis-understanding of science. Physicists don't prove anything. Physicists test their hypothesis.
Experiments, by their very nature, are a tool for disambiguation. You take all possible options into account:

Null hypothesis: The existence or non-existence of God cannot be determined.
Alternative hypothesis 1: God exists.
Alternative hypothesis 2: God does not exist.

What evidence would support or contradict the alternative hypotheses?

I'm not sure, I haven't seen it in the form that has eyes. Just because the multitudes don't know it exists, does not mean there is not someone out there that comprehends 'its' 'Gods' attributes in a logical and coherent way, that I can relate to.

At the very least you MUST know what experimental results confirm, and what experimental results contradict your hypothesis! You must know at least THAT!

If I told you that a cat has 5 legs, then you EXPECT to count 5 legs on a cat!
You don't EXPECT any other number!

So I imagine you will be very surprised when you count 4 legs on an actual cat.
