Well it can be understood (at least) two ways:
- the one you wrote, that the universe literally couldn't exist without us
- that we are integral parts of the universe, so humans can't be treated separately from the environment, the two are inseparable; and also, there is no real dichotomy of voluntary and involuntary actions

Looks like the summary video rather meant the first one, which is indeed nonsense. The second one is correct, I'm not sure that Watts himself always meant the second one though, he was somewhat ambiguous on this one. Overall he was probably the best major philosopher/interpreter of the last century on this side of the globe though, that's how off you are.

That is incorrect; Buddhism has actually held up quit well with science. There has been interesting dialogue between Buddhism and neuroscience.

That's ONLY because they're good at meditating that science now wants to study, since buddhist monks can stay sane in isolation, in total darkness in Chinese prisons.

Not true. Certain forms of Buddhism were never "faith based" but focused on a critical analysis of common subjective experience. Hence why it fits well with science.

The Dalai Lama famously said that if science ever disproved something about Buddhism... Buddhism must change. That is a dialogue.

I would also bet on the Dalai Lama, if I was a Tibetan man (love that joke). :-)

Such videos may not do justice to the person, this is the situation in this case. The basic ideas are sound.
