This is a difficult one becuz there isn't much about an elephant that u could use to draw the similarity between the mexican and the elephant that will make the joke funny. Really, when we think of elephants, all we get is tusks, good memories and being terrified of mice. Now how do we work these elements into a joke about immigration?
